Setting up a restaurant is the new startup ?

28 years old, chef and owner of Vacarme restaurant since 2019.
I started cooking at 18 years old, training at Ferrandi, Paris.
Then I worked in Paris in different places, Le cab Jaune, Holybelly, Le Mary Celeste.
Damien, my partner, was working at that time at Le Verre Volé. We decided to move to Nantes to open our restaurant.
Then Top Chef came along in 2020 and I ended up as a finalist on the show.
Since then, things have been going fast, I do a lot of events, videos for brands, signing menus thanks to the agency La Releve which I am part of.
A book and a new restaurant are coming soon.
